Kamut Cowboy Cookies

When you think of good ol' farm style living (like what we're working to create here on Barefoot Bluff), you simply have to have a good ol' cookie recipe. Right? We thought you'd agree.

But we wanted to make cookies that are more than just a fun treat. They have to be nutritious too. Well, read on for a favorite staple around here that we're calling Kamut Cowboy Cookies featuring our favorite - Kamut flour?

Never heard of it? We hadn't either, but it's the commercial name for an ancient grain, khorasan. In our journey to see food as medicine and get back to how God created our bodies to enjoy food, we've had to face the fact that some of our favorite things just don't fit the bill. As a result, we are bound and determined to find creative ways to not miss out on our favorite things like cookies, bread, tortillas, hamburgers, and so much more! When we discovered Kamut flour we were thrilled because we like it even better than regular flour. It has a buttery, almost nutty taste, it's high in protein and other great nutrients, and it's easier to digest. Plus, being forced to bake more homemade items is actually really fun!

These Kamut Cowboy Cookies have the perfect crisp on the outside and gooey goodness on the inside. In our family, half of us love chocolate chips and the other love raisins, so we usually do one batch of each. We hope you love this recipe as much as we do. If you haven't tried Kamut flour before, check out Food Nanny's Kamut flour or see if your local grocery store carries it. Azure Market is another a great resource when it's in stock.
